Stir-Fried Green Beans Recipe

Green beans or snow peas
Fresh bean sprouts
Oil
Salt
Sugar

Method :

Wash and trim the beans,
shred if necessary.

Wash and rinse the bean
sprouts in a bowl of cold water and discard the husks and other
bits and pieces that float to the surface.

Remove the roots too if
possible

Heat the oil in a hot wok
or large frying pan and when it starts to smoke, swirl the wok so
that its surface is well greased.

Add the green beans first,
stirring to make sure that each piece is well covered with oil,
then the bean sprouts and stir-fry for 30 seconds.

Add the salt and sugar.

Continue stirring for
about 1 minute at the most.

Overcooking will turn both
the green beans and bean sprouts into a soggy mass.

Serve hot.
