Sri Lankan Vegetable Curry Recipe

Garlic, crushed
Green chilies, seeded and very
finely chopped
Ground turmeric
Fenugreek seeds
Medium onion, chopped
Curry leaves
Cinnamon stick
Coconut milk

Method :

Peel the pumpkin and cut into 2 cm cubes. Peel the
potato and cut into 2 cm cubes.

Trim the stems from the okra.

Heat the oil in a large heavy-based pan, add the garlic,
chili, turmeric, fenugreek seeds and onion.

Cook over medium heat for 5 minutes or until the onion
is soft.

Add the pumpkin, potato, okra, curry leaves, cinnamon
stick and coconut milk.

Bring to the boil, reduce heat and simmer, uncovered,
for 25 to 30 minutes or until the vegetables are tender.

Serve with rice.
