Lentils with Spices Recipe

Medium onions, finely sliced
Small red chilies, finely
chopped
Dried shrimp
Ground turmeric
Red lentils
Curry leaves
Coconut milk
Vegetable stock
Cinnamon stick
Lemon grass (white part only)

Method :

Heat the oil in a medium pan. Add the onion and cook
over medium heat for 10 minutes, or until the onion is deep golden
brown.

Remove half the onion and set aside to use as a garnish.

Add the chili, dried shrimp and turmeric, and cook for 2
minutes.

Stir in the lentils, curry leaves, coconut milk, stock,
cinnamon stick and lemon grass.

Bring to the boil, reduce heat and simmer, uncovered,
for 45 minutes.

Remove the cinnamon stick and lemon grass and garnish
with the reserved onion.

Serve.
