Lamb Kofta Recipe

Lamb mince
Onion, finely chopped
Green chilies, finely chopped
Fresh ginger, grated
Garlic, crushed
Ground cardamom
Egg
Fresh breadcrumbs
Ghee or cooking oil
Ghee or oil
Onion, sliced
Green chili, finely chopped
Fresh ginger, grated
Garlic, crushed
Ground turmeric
Ground coriander
Ground cumin
Chili powder
White vinegar
Water
Plain yoghurt
Coconut milk

Method :
-
Line an oven tray with
baking paper.

Place the mince in a large
mixing bowl.

Add the onion, chili,
ginger, garlic, cardamom, egg and breadcrumbs, and season well
with salt and pepper.

Mix until combined.

Roll level tablespoons of
the mixture into balls and place them on the prepared tray.

Heat the ghee in a frying
pan. Add the meatballs in 2 batches and cook over medium heat
until browned all over.

Transfer the meatballs to
a large bowl.

To make the sauce, heat
the ghee in a pan, add the onion, chili, ginger, garlic and
turmeric.

Cook and stir over low
heat until the onion is soft.

Add the coriander, cumin,
chili powder, vinegar, meatballs and water and stir gently.

Cover and simmer for 30
minutes.

Stir in the combined
yoghurt and coconut milk and simmer for another 10 minutes with
the pan partially covered.

Serve with steamed white
rice.
