        Cut the beef into thin
              strips and mix with the salt and pepper.

        Toss in the cornflour and
              coat in the egg white.
 
        - 
        
        Shred the ginger.
 
        - 
        
        Cut each snow peas
              slantwise in half and cut the onions slantwise in 4cm sections.
 
        - 
        
        Heat the oil in a wok or
              frying pan.
 
        - 
        
        When hot, stir-fry the
              ginger in the oil to flavor.
 
        - 
        
        Add the beef and stir-fry
              over high heat for about 1 minute.
 
        - 
        
        Remove and set aside.
 
        - 
        
        Add the lard to the pan.
 
        - 
        
        When hot, stir-fry the
              snow peas and spring onions for 1-2 minutes.
 
        - 
        
        Add the stock and soy
              sauce, and continue to stir-fry for 30 seconds.
 
        - 
        
        Return the beef to the pan, add the oyster sauce and wine or
              sherry and stir-fry over high heat for 30 seconds.
 
        - 
        
        Serve.
