      Steamed Carp with Ham Recipe

            Bamboo shoots 
            
            Chinese dried mushrooms, soaked 
            
            Pork fat 
            
            Salt 
            
            Sugar 
            
            Chinese wine or sherry 
            
            Spring onions (scallions) 
            
            Ginger root 
            
            Lard

      Method :
        - 
        
        Scale and gut the fish,
              clean and dry well.  
        - 
        
        Trim off fins and tail.  
        - 
        
        Score the body three or
              four times half way down.  
        - 
        
        Then place it on an oblong
              dish.  
        - 
        
        Cut the ham, bamboo
              shoots, mushrooms and pork fat into match-sized shred.  
        - 
        
        Arrange them in four
              different rows according to color in a star shape.  
        - 
        
        Spread the salt, sugar,
              wine, lard, onions and ginger root evenly on top of the fish.  
        - 
        
        Steam vigorously for 20
              minutes.  
        - 
        
        Discard the onions and
