Shrimps with Wine Recipe

Freshwater shrimps
Egg white
Shaoxing wine or sherry
Monosodium glutamate
Salt
Cornflour
Spring onion (scallions) cut into 2.5 cm
Lard for deep-frying

Method :

Shell the shrimp.

Put them in cold water and
stir with chopsticks for 3 minutes.

Change the water two or
three times, then drain.

Mix them with the salt,
monosodium glutamate, egg white and the cornflour.

Marinate for 3 hours.

Heat the lard and deep-fry
the shrimps.
-
Separate them with
chopsticks after 15 seconds or so.

Scoop them out and drain.
-
Pour off the excess lard,
return the shrimp to the wok, add the wine, and stir a few times.

It is then ready to serve.
