      Red-Cooked Sea Bass Recipe

            Sea bass 
            
            Lard for frying 
            
            Soy sauce 
            
            Sugar 
            
            Rice wine or dry sherry 
            
            Bamboo shoots, cut into small slices 
            
            Dried Chinese mushrooms, soaked 
            
            Salt 
            
            Spring onions (scallions) 
            
            Fresh root ginger, peeled 
            
            Cornflour 
            
            Water

      Method :
        - 
        
        Clean the fish, wash and
              dry it thoroughly.  
        - 
        
        Cut it into slices of
              uniform thickness.  
        - 
        
        Warm up the lard, coat the
              skin of fish with soy sauce and fry for 5 minutes.  
        - 
        
        Turn it over, add the
              remaining soy sauce, sugar, rice wine or sherry, bamboo shoots,
              mushrooms, salt, onions, root ginger and water.  
        - 
        
        Bring it to the boil and
              bubble over a high heat for 5 minutes.  
        - 
        
        Reduce the heat and simmer
              for 15 minutes, by then the juice should be reduced.  
        - 
        
        Remove the fish onto a
              plate, add the cornflour to thicken the gravy, then pour it over
              the fish and serve.
