Deep Fried Sweet and Sour

Fish fillet (flounder or sole)
Cornflour
Oil for deep-frying
Sugar
Soy sauce
Vinegar
Rice wine or sherry
Cornflour
Lard
Ginger root, finely chopped
Spring onion (scallion), finely chopped

Method :

Cut the fish into small,
thin slices and coat them with cornflour.

Heat up the oil in a wok
or deep-fryer over a high heat until smoking.

Then reduce the heat and
use a pair of chopsticks to put the fish slices into the oil and
deep-fry them for about 2 minutes or until golden.

Remove and drain.

Heat up the lard in a hot
wok or pan.

Meanwhile, mix the sugar,
soy sauce, vinegar, wine or sherry and cornflour in a bowl.

Toss the finely chopped
ginger root and onion into the hot lard, then pour in the sauce
mixture and stir until thickened.

Now add the fish slices,
blend well so that each piece is coated with the sauce.

Serve hot.
