            Duck 
            
            Vegetable oil for deep-frying 
            
              
            
            Good stock 
            
            Sugar 
            
            Fresh root ginger 
            
            Soy sauce 
            
            Yellow bean paste 
            
            Rice wine or dry sherry 
            
            Star anise 
            
            Five-spice powder 
            
            Pepper

      Method :
        - 
        
        Mix the ingredients for
              the cooking sauce together in a large saucepan.  
        - 
        
        Clean the duck thoroughly
              and cut in half down the backbone.  
        - 
        
        Place into the liquid and
              submerge.  
        - 
        
        Simmer the duck gently for
              2 hours.  
        - 
        
        Remove from the cooking
              liquid and leave to cool.  
        - 
        
        When required, heat the
              oil in a wok or deep-fryer.  
        - 
        
        When hot, place the duck
              gently in the oil and fry for 10-11 minutes.  
        - 
        
        Drain well and serve.
