Braised Prawns Recipe

Large shrimps in their shells
Soy sauce
Rice wine or dry sherry
Salt
Sugar
Stock
Lard

Method :

Trim off the legs and
heads of the shrimps but keep the shells and tails on.

Heat up the lard, fry the
shrimps for about 5 minutes or until golden.

Using a slotted spoon,
remove the shrimps from the wok and then drain off the excess lard
from the wok.

Return the shrimps, add
rice wine or sherry, soy sauce, stock, sugar and salt.

Cook until all the juice
is absorbed,

Serve either hot or cold.
