Method :

Peel the marrow
and remove seeds.

Cut into slices
about the thickness of a finger.

Heat oil in a
large frying pan or wok and when a faint haze begins to rise, dip marrow
slices in batter and drip, one at a time, into the oil.

Do not try to
fry more than 8 pieces at a time.

When the batter
is golden, remove from the oil.

Drain on
absorbent paper and serve immediately.
Note : Served
as a between-meal snack or as part of a meal, this is a favorite way of
preparing vegetables.
